Bourbon Mushroom Sauce

Bourbon Mushroom Sauce

  • 4 Tablespoons Butter
  • 4 Cups sliced button mushrooms
  • 1 Tablespoon minced Garlic
  • ¼ cup Bourbon
  • 2 Cups Heavy whipping cream
  • ¼ cup scallions chopped
  • salt and pepper to taste

Melt butter in large skillet. Add in sliced mushrooms. Season with salt and pepper.
Continue to stir until all the mushrooms are coated with the butter. Cook over
medium high heat for 1-2 minutes. Press the mushrooms down to flatten and
achieve a nice golden brown on one side while the mushrooms continue to
soften. Once browned take off the heat add the bourbon, return to heat and
flame off. Once flamed off add in the garlic and the heavy whipping cream. Bring
to a boil, toss in scallions and reduce until the cream has reduced and made a
thick sauce. Adjust salt and pepper and serve
