Honey Balsamic Cantaloupe


  •  1 Melon, skinned, de seeded, and sliced thin. (I prefer cantaloupe)
  • ½ cup Honey
  • ¼ cup Balsamic Vinegar
  • 2 tsp freshly cracked black pepper
  • ¼ tsp. kosher salt
  • ¼ cup basil thinly sliced
  • 1/2 cup goat cheese crumbled


Place the sliced cantaloupe into a medium bowl. Whisk together the honey, balsamic, pepper, salt, and basil. Pour over the cantaloupe. Place in the refrigerator to chill for at least 45 minutes to an hour. Top with goat cheese and serve.
