Green Curry Vegetables
Here’s Shandies’ delicious recipe for Green Curry Vegetables.
2 1/2 pounds of mixed vegetables such as the following: Broccoli, carrots, bell peppers, squash, zucchini, red onion, cauliflower.
2 table spoons sesame oil
1/2 teaspoon fresh grated ginger
1/2 teaspoon minced garlic
2-3 tablespoons soy sauce
1/4 teaspoon green curry paste
1 can coconut milk
1/2 cup cilantro
salt and pepper to taste.
Heat sesame oil in pan. Sautee vegetables just until they begin to get tender. Add garlic, soy sauce, ginger, and green curry paste. Continue to sautee for about two minutes. Add soy sauce and coconut milk. Continue cooking until vegetables are cooked to your preference. Ideally the vegetables should still have little bite and retain bright color. Adjust salt and pepper, stir in cilantro and serve over rice.
