Chili

Here’s Shandies’ delicious recipe for Chili:

2 lbs Beef tips

1 poblano pepper, seeded and diced

2 TBS chili powder

2 teaspoon ground cumin

3 garlic cloves, minced

2 cups diced tomatoes, undrained

2 cups beef broth

1 can red beans 1 can black beans

1 large diced red onion

1/3 cup minced fresh cilantro

1 can tomato paste

3/4 cup thinly sliced green onions, divided

6 tablespoons sour cream

shredded cheddar

3 chipotles peppers in adobo sauce

2 TBS sugar

Brown the beef tips in a couple of table spoons of oil. Once they have browned, add the onion and pablano peppers and cook until tender, adding the garlic toward the end of that time so as not to over cook it. Add in the seasoning and let simmer together for about a minute before adding the tomatoes, tomato paste, chipotle peppers, sugar, beef broth, and beans. Let the chili simmer together for at least thirty minutes. Just before serving, stir in the green onions and cilantro reserving a bit for garnish. Serve with a bit of sour cream and shredded cheddar.
