Green Tomato Soup

Here's Artisan Kitchen's delicious recipe for Green Tomato Soup.

Ingredients:
1 Poblano pepper
2 TBS Butter
2 TBS olive oil
2 medium onions diced
4 celery ribs chopped
4 garlic cloves, minced
2 ½ lbs. of green tomatoes, cored and chopped
6 cups chicken broth
2 bay leaves
4 cups fresh spinach
7 basil leaves
1 cup chopped cilantro
1 lemon juiced
2 tsp hot sauce

Directions:
Char the poblano pepper over a flame and place in plastic bag to sweat. Remove after about 5 minutes, scrap and chop. Place diced butter, olive oil, onion and celery in a pot and sauté until onion is translucent. Add diced pepper, and garlic and cook for at least two minutes more. Add tomatoes, broth and bay leaves. Bring to a boil and then reduce heat to simmer, stirring occasionally. Simmer for 15 to 20 minutes, or until the tomatoes are tender. Discard the bay leaves, stir in cilantro, basil, spinach, hot sauce and lemon juice. Process until smooth using an emersion blender or food processor. Adjust salt and pepper. May be served as a hot or cold soup.
