Gourmet Minutes - Black Bean and Corn Salad

On this week's Gourmet Minutes with Mallory, chef Karla Lawrence from Artisan Kitchen shows Mike how to make black bean and corn salad.


2 - 15 oz. cans black beans, rinsed and drained

1 # bag frozen corn thawed and drained

1 red bell bell pepper diced

1/2 cup diced red onion

1/4 cup cilantro chopped through


Juice and zest of 1 lime

1 cup sour cream

1 tsp. salt

1 tablespoon sugar

1 tsp. black pepper

2 tsp. cumin

1 tsp. chili powder


Mix dressing together and set aside.

In another bowl toss together the black beans, corn, red pepper, and red onion. pour the dressing over the mixture and add the cilantro. adjust salt and pepper to taste. refrigerate until ready to serve.
