Gourmet Minutes - Moroccan Chicken
On this week's Gourmet Minutes with Mallory, Artisan Kitchen chef Karla Lawrence shows Mike how to make Moroccan Chicken.
1/4 cup Extra Virgin Olive Oil
4 onions julienne
2 teaspoons white pepper
After caramelizing the above ingredients, add:
1 cup sugar
1/4 teaspoons cayenne
2 tablespoons minced garlic
2 teaspoons smoked paprika
6 cups of diced tomatoes with juice
1 cup honey
1 tablespoon cinnamon
1 teaspoon salt
Simmer sauce until thick. Pour 2 cups of the sauce into a nonstick sprayed casserole pan (9 x 13). Arrange 10 medium, pounded, seasoned, browned (salt, pepper, paprika) chicken breasts in pan. Pour more sauce over the chicken. Top with goat cheese and sliced almonds. Bake 35-45 minutes until chicken is cooked through. Let stand 5-10 minutes before serving.
