Gourmet Minutes - Roasted Garlic Hummus

On this week's Gourmet Minutes with Mallory, Artisan Kitchen chef Karla Lawrence shows Mike how to make Roasted Garlic Hummus.

Ingredients (8-10 servings):

- 15 oz can chickpeas

- 1 Tablespoon roasted garlic

- 3/4 teaspoon salt

- Juice of 1 large lemon

- 1/4 cup tahini

- 1/4 cup extra virgin olive oil

- 1/4 cup juice from the chickpeas


Bring chickpeas to a boil, drain and reserve the juice. Process all ingredients in a food processor until smooth, about 40 seconds. Transfer the hummus to a serving bowl, cover with plastic wrap and chill until the flavors meld, at least 30 minutes; serve cold. (The hummus can be refrigerated for up to two days).
