Gourmet Minutes - Tortellini Salad

On this week's Gourmet Minutes with Mallory, Artisan Kitchen chef Karla Lawrence shows Mike how to make tortellini salad.

Ingredients:

- 2 (8-10 oz.) packages of dried tortellini (prepare according to package directions)

Dressing:

- 1 1/2 cups extra virgin olive oil

- 1/2 cup balsamic vinegar

- 2 tablespoons minced garlic

- 1/4 cup fresh basil chopped

- 3 tablespoons honey

- 1/4 cup chopped green onions

- 1 tablespoon fresh rosemary minced

- Freshly ground black pepper

- 1/2 teaspoon salt or more to taste

Stir-ins:

- 3 cups frozen peas thawed

- 3 cups roma tomatoes chopped

- 1 cup red onion julienne

- 1 cup red pepper julienne

- 1 cup grated parmasean cheese

Directions:

Whisk together dressing. Toss in pasta and other ingredients, gently folding. Chill until ready to serve.
