Pan Seared Salmon


4 boneless skinless salmon filets 6-10 oz each
12 oz baby spinach
1pint cherry tomatoes, halved
2 oz EV olive oil
1 cup white wine
2tbs minced garlic
6tbs butter cubed
Salt and pepper

Add oil to skillet that has been heated over medium-high heat
Carefully place salmon in skillet
Brown both sides
Remove salmon from pan and place on sheet pan
Place salmon in 350 degree oven
Add spinach and tomatoes to skillet and cook for 1 minute
Add garlic and a pinch of salt and pepper cook for 30 seconds
Add wine to de-glaze
Remove from heat and swirl in butter
Remove Salmon from oven when it reaches desires doneness
Plate up salmon placed on top of the spinach and tomato sauce mixture
