Chicken and Sausage Gumbo


1 cup peanut oil
1 cup flour
8 oz. chicken breast, diced
8 oz smoked sausage diced
4 TBS minced garlic
1 15 oz can diced tomatoes
1 bag frozen gumbo vegetables (if mix is unavailable get fresh veggies and frozen okra)
3 quarts chicken stock
1 TBS each of thyme, oregano, basil (dry is fine)
2 TBSP hot sauce
4 cups of prepared rice

Cook flour in the peanut oil (roux) until a rich brown color is reached
    (over medium high heat in a large pot stirring constantly)

Add chicken, sausage and vegetables to the roux
Add stock
Add spices and hot sauce

Simmer for 30 minutes
Add salt and pepper to taste

Serve over rice
