Gourmet Minutes - Watermelon and Feta Salad

On this week's Gourmet Minutes with Mallory, Artisan Kitchen chef Karla Lawrence shows Mike how to make a Watermelon and Feta Salad.

Ingredients (in order of use):

1 Watermelon (approx. 5lbs.

1 Red onion, sliced thin

¼ cup Balsamic Vinegar

½ cup Olive Oil

Salt and Pepper to taste

2 TBS chopped fresh mint

4 ounces Crumbled feta

Mint Sprigs for Garnish


Put the following in a large mixing bowl. Cube watermelon into bite-sized pieces. Slice red onion into thin strips or rings. Crumble the feta cheese.

In a smaller bowl, put the Balsamic vinegar, salt, pepper and mint. Slowly drizzle in the olive oil while whisking to emulsify.

Pour the oil and vinegar dressing over the watermelon and feta mix and toss gently.

Keep chilled till ready to serve.

Garnish with fresh mint sprigs.
