CARLISLE COUNTY, Ky. - Carlisle County Superintendent Randy McCallon is trying to get to the bottom of a photo that surfaced from a student Wednesday. The mother of the student who snapped the picture said it's a piece of ham from her lunch. McCallon isn't sure.
"I know we had ham sandwiches that day and I don't know how that picture equates to a ham sandwich," he said.
Since new guidelines for school lunches went into effect this year, McCallon said schools are having to tweak their menus. He stands behind his staff and says they are working hard to abide by federal regulations.
"Generally they're very servant oriented, they take pride in what they serve," McCallon said. While McCallon believes districts nationwide are dealing with similar issues, he says this is an isolated incident for his schools. He's even willing to meet with parents over ways to improve student health.
"Could we be more creative? Maybe, at time. Is it perfect? No. Is there discussions ongoing all the time? Yes," he told Local 6.
McCallon knows he can't please every student with every meal, but he's hoping students understand he has their best interest at heart.
"My first consideration is kids and that is the message I am promoting and sending throughout our district every day," he said.
