Here's Artisan Kitchen's delicious recipe for Chocolate Avocado Mousse.
Ingredients (serves 2-4): - 2 large extra ripe avocados - 1/3 cup cocoa powder - 1/4 cup coconut milk or almond milk - 1/4 cup sugar (or other natural sweetener, honey, agave or stevia) - 1 Tbsp. Vanilla extract
Directions: Cut avocados in half and remove the center stone. .scrape the pulp from the shin and put into the food processor. Add in the cocoa powder, sugar, milk & vanilla extract. Purée until smooth, scraping down the bowl frequently to ensure even mixing. Check for sweetness if you need to add more sweetener do this now. Transfer the mousse to individual bowls and store in the fridge until ready to eat.
