1 pound Washed, Lg. Strawberries cut in half (Tops left on)
6 ounce chub plain goat cheese
2 tablespoon Honey
Zest from 1/2 Lemon
2 teaspoon lemon juice
Using a melon baller or small spoon, scoop some of the strawberry centers out to form a cup. Set upside down on some paper towels to soak up some of the juice while making the filling.
Put goat cheese, honey, lemon zest and juice into a small bowl and mix thoroughly. Using a piping bag or small spoon place filling into the cups you formed in the strawberry making a generous mound or swirl with the piping bag. Place in refrigerator and chill till ready to serve.
