Karla makes Apple Cider Poached Salmon

APPLE CIDER POACHED SALMON Ingredients

  • 1 SKIN ON SALMON FILET (2-3 POUND)

  • 1 TABLESPOON OLD BAY SEASONING

  • 3-4 CUPS APPLE CIDER

  • 2 SPRIGS FRESH ROSEMARY

  • 1 8 OZ JAR APPLE JELLY

  • 1 TSP CRUSHED RED PEPPER FLAKE

    Directions

  • PREHEAT OVEN TO 325.

  • PAT THE SALMON FILET DRY WITH A PAPER TOWEL AND PLACE ONTO A LARGE PIECE OF FOIL.

    PLACE INTO A 9X13 OR 7X11 BAKING PAN.

  • KEEPING THE SIDES OF THE FOIL UP, RUB DOWN THE SALMON WITH THE OLD BAY. POUR THE

    APPLE CIDER TO COVER THE FILET. TEAR 1 SPRIG OF ROSEMARY AND LAY ATOP THE SALMON.

    SEAL THE FOIL TO FORM A PACKAGE. POACH IN THE OVEN FOR 25 TO 30 MINUTES.

  • WHILE SALMON IS POACHING PLACE THE APPLE JELLY IN THE MICROWAVE FOR 1 MINUTE OR

    UNTIL MELTED. REMOVE CAREFULLY AND STIR IN THE PEPPER LFAKE AND 1 TEASPOON OF

    ROSEMARY CHOPPED FINE. SET ASIDE

  • REMOVE SALMON FROM THE OVEN AND CHECK FOR DESIRED DONENESS. LET COOL SLIGHTY.

    CAREFULLY REMOVE THE SALMON FROM THE BAKING DISH AND PLACE ONTO A PLATTER. COVER THE SALMON WITH THE WARM JELLY. SERVE WARM, ROOM TEMPERATURE OR CHILLED.
